Vegetarian Lasagna | Momma Braga Recipe

Our lasagna recipes have been a great hit and we decided to share one more which is our vegetarian one. It was very easy to make and absolutely delicious.

Let’s roll up our selves and get cooking!

Vegetarian Lasagna

INGREDIENTS

  • Vegetables of your choice (We used red, orange and yellow bell peppers and zucchini)
  • Olive Oil
  • Lasagna Pasta
  • Shredded Mozzarella Cheese
  • Tomato Sauce
  • Salt
  • Black Pepper

DIRECTIONS

  • First, wash and cut all your vegetables that you would like to use as your lasagna filler (that is what I like to call it).
  • Then, add some seasoning to your vegetables. I put some salt, black pepper and drizzle olive oil. Once it is seasoned, you can sauté them in a pan.
  • Once the vegetables are complete, place them aside for afterwards.
  • The following day you can start cutting up your onions and tomato.
  • In another pot, fill it with water and add a drizzle of olive oil with a dash of salt and the add your lasagna pasta. Once the pasta is cooked, drain the water and fill it with cold water to cool down the pasta.
  • Then the layering begins. Start with some tomato sauce and spread to cover the bottom of the lasagna tray. Layer with lasagna pasta, tomato sauce, vegetables and mozzarella cheese. Continue layering until all ingredients are used, reserve 1/2 cup of mozzarella cheese for the top of the lasagna. *Tip: Use cheese on the first layer and the layer before the very top.

  • Bake in preheated oven for approx. 45 minutes (or until the cheese is melted to your liking). Remove from oven, and let stand 10 to 15 minutes before serving.

And there you have it, Vegetarian lasagna! Give it a try and let me know what you think of it! It has been a great hit in our home and an easy meal to deliver to someone who may need a great meal while at home.

Roasted Chicken Recipe

Chicken is always my go to dish as that is the one meat that is best for my health. At times it can get tiring making grilled chicken; therefore, I shake it up a bit by making roasted chicken.

This dish is not an every day meal since it takes a really long time to cook but worth every minute!

Here is my recipe on roasted chicken and it is absolutely delicious!

Roasted Chicken

INGREDIENTS

DIRECTIONS

  • Wash the whole chicken and cut the tail of the chicken.
    • Place washed chicken in roast pan.
    • Add your ingredients: salt, black pepper, chopped garlic cloves, paprika, Half cup of red wine and half cup of water. Measurements for the ingredients are based on what you normally use in your meat marinating.
    • Remember to add ingredients on top and bottom of the chicken.

  • Cut the onions into rings and spread them on the chicken and within the roasting pan. It will float in the wine and water that was used.
  • Pre-heat the oven (475 Fahrenheit) and once oven is ready place the roasting pan in the oven.
  • Place timer for 45 minutes (oven times may vary depending on your oven). Once the time is up, turn the oven chicken over to cook the back side.
  • Place timer for another 45 minutes. Once the time is up, flip it again and add another 30 minutes.
  • Always double check to make sure the chicken is fully cooked before removing. Usually I do a cut in the chicken to check (make sure to wear your oven mittens).
  • Once complete you can remove from the oven. Once cooled, cut the chicken to your liking and serve with a side of your choice.
  • Optional – we made some chicken gravy to add over and depending on what we are feeling, we have used homemade stuffing (recipe coming soon), roasted potatoes or rice. Of course we always have a side of salad! 😉

And there you have it, Momma Braga’s Roasted Chicken! Give it a try and let me know what you think of it!

Easy Oven Roast Beef Recipe

Our recipes have been very popular on our blog and I want to thank everyone for taking the time to show us the love! In today’s post, I am sharing an easy over roast beef recipe that I created by taking what I liked best from my mom and sister’s recipe.

I am a very simple person and like keeping ingredients as simple as possible. After going on Pinterest almost daily for two weeks straight to look at roast beef recipes, I just got deflated. I didn’t think I could make it as it all seemed hard and complicated. Even the ones that said, “Easy.” I combined my usual ingredients and added a little extra to really bring this recipe to the delicious level that had everyone wanting more.

Oven Roast Beef

INGREDIENTS

DIRECTIONS

  • Marinate your oven roast a day prior to let the meat soak in the ingredients for best taste.
    • Wash roast well.
    • Then make cuts in the meat on top. I sliced a bit into the meat but not all the way through. This way the ingredients can get into the meat and the juices will flow while cooking.
    • Place the roast in a roasting pan.
    • Add your ingredients: salt, black pepper, chopped garlic cloves, paprika, Half cup of red wine and half cup of water. Measurements for the ingredients are based on what you normally use in your meat marinating.
    • Remember to add ingredients on top and bottom of the roast. Then massage it into the roast all over. This was fun!
  • Cut the onions into rings and spread them on the roast and within the roasting pan. It will float in the wine and water that was used.
  • Add 1 tablespoon of butter, one bay leaf into the roasting pan and drizzle olive oil on roast an in the pan.
  • Place it in the fridge with a tin foil covering it until you are ready to cook the next day.
  • The next day remove the pan from the fridge and after the oven is pre-heated (475 Fahrenheit), place it in the oven with the tin foil still wrapped.
  • Place timer for 60 minutes. Once the time is up, turn the oven roast over to cook the bottom side.
  • Place timer for another 60 minutes. Once the time is up, remove it from the oven.
  • Let it cool it down so it is safe to cut. Once it is, you can slice the roast beef all the way through. This is a great way to determine if you need to cook more to ensure that it cooked to your liking.
  • We like it well done so once it was sliced, I placed it back in the oven for another 30 minutes on one side and then flipped them for another 20 minutes (All timing can vary depend on ovens).
  • Once complete you can remove from the oven and it can be ready to serve with a side of your choice. I kept some of the sauce from the pan and onions onto the tray to keep the flavor. 😉
  • Optional – we made some gravy to add over the roast beef and I used roasted potatoes as the side for my family. This was a great hit!

Tomato Soup | Recipe

A soup that my mom would make for us is tomato soup but it isn’t exactly what you think as we don’t actually use tomatoes. 😉

If you are looking for a simple and hearty soup recipe then this may be the one for you.

INGREDIENTS

  • Water
  • Tomato Paste
  • Salt
  • Olive Oil
  • Knorr of Chicken
  • Onions
  • Pasta (we usually use small pasta)
  • Potatoes
  • Boiled Chicken Breast (marinated with salt, black pepper and garlic powder)

DIRECTIONS

  • First clean the chicken breast and marinate it with some salt, black pepper and garlic powder. Once completed, boil it first until it is fully cooked.
  • Once chicken breast is cooked, remove it from the water. Shred the chicken breast into pieces to add into the soup afterwards.
  • In a new pot, add water for the soup. It is always best to almost fill to the top as water does decrease when boiled. Add a teaspoon of tomato paste, some salt, a dash of olive oil and knorr of chicken.
  • Clean and cut 2 onions into quarters and add to pot of water.
  • We also peel potatoes and cut them into small pieces to add into the soup.
  • Once all ingredients are added, turn the heat onto medium.
  • Stir as necessary and once potatoes are almost fully cooked, add the pasta and shredded chicken. Take a quick taste to see if additional salt needs to be added.
  • Once pasta is cooked, the soup is ready.

That is it! A simple recipe that is hearty and delicious! Enjoy!

Momma Braga’s Clam Stew

A very easy and simple recipe that my husband adores in our home is the Clam Stew. We like to do this meal every once in awhile and we love how simple it is.

Clam Stew

INGREDIENTS

  • 1/2 Onion
  • Olive Oil
  • Salt
  • Black Pepper
  • Paprika
  • Baby Clams (We love to use the Ferma Baby Clams)
  • Cup of water
  • 5 to 7 potatoes

DIRECTIONS

  • Start by washing the onions and potatoes. Chop up the onions and potatoes. Everyone has a preferred style for potatoes in their stew, we like it diced. Set the potatoes aside as you will need them later.
  • Once the onions are cut, place them in a pot with some olive oil with a pinch of paprika, salt and black pepper. On low heat cook the onion until the onions are a golden color. Then add your clams (including the liquid that is included in the canned clams), potatoes and one cup of water.
  • Let it cook on medium and stir.
  • Now cook until the potatoes are cooked and you are done. If a fork goes through the potatoes then that is my sign that they are done.
  • You can serve your clam stew in a bowl and if you like Portuguese buns, then provide some at the dinner table as they are great for dipping into the stew.

And there you have it, Momma Braga’s clam stew! Give it a try and let me know what you think of it!

Zucchini Lasagna Recipe

Lately we have been trying to make better eating choices and this meant eliminating some traditional dishes. We haven’t had cheese in a very long time and wanted to have it for a special dish. After some lengthy research and discussions with friends, we realized how zucchini can be used as a substitution for pasta! This was one of the food items that I have eliminated from my eating lifestyle so I thought why not try a Zucchini Lasagna!

I took my traditional Lasagna recipe and changed it a bit to accommodate the Zucchini and another veggie too! 😉

Zucchini Lasagna

INGREDIENTS

  • Ground Chicken (or Ground Turkey or Ground Beef)
  • 1 Onion
  • Half of a tomato
  • Olive Oil
  • 5 Zucchinis
  • Shredded Mozzarella Cheese
  • Tomato Sauce
  • Salt
  • Black Pepper
  • Garlic Powder
  • Paprika
  • 4 Tablespoons of red wine

DIRECTIONS

  • Marinate your meat (which ever one you prefer to do. We love the ground turkey as it is much lighter) prior to cooking. I usually do this the night before to have the meat soak in the juices for more flavor.
    • Wash meat well.
    • Place meat in a bowl and add the following ingredients; salt, black pepper, garlic powder, paprika, 4 teaspoons of red wine (the wine added is what sets this recipe apart from many). Measurements for the ingredients are based on what you normally use in your meat marinating.
    • Leave the meat covered and in the fridge for the next day cooking.
  • The following day you can start cutting up your onions and tomato.
  • Once the onions and tomato are cut, place them in a pan with some olive oil. On low heat cook the onion and tomato until the onions are a golden color. Then add your meat.
  • With ground meat you will need to keep breaking it apart and stirring it to ensure it gets cooked. Once the meat is cooked remove it from the pan with a slotted spoon to ensure that the olive oil is drained.
  • Place the ground meat in a bowl and mix some tomato sauce.
  • Next step is prepping the zucchini, chesses and veggies.

  • Then the layering begins. Start with some tomato sauce and spread to cover the bottom of the lasagna tray. Layer with zucchini slices, tomato sauce, ground meat, bell peppers and mozzarella cheese.

*Zucchini is a very moist vegetable and there may be a lot of juices after cooking it. Some recipes recommend to add more meat to soak up the juices but we didn’t as we loved it this way.

And there you have it, Zucchini lasagna! Give it a try and let me know what you think of it!
