Baked Garlic Lemon Salmon | Recipe

Growing up in a Portuguese household, it wasn’t uncommon to have a fish dish for dinner. However, the one type of fish my parents did not do was salmon. Only when I got older did I notice that salmon was often served at the special events that I would attend and after eating “one bad one.” It was a dish that I stayed away from but it was time to go back to salmon.

I researched for long hours trying to figure out what recipe was easy to follow for my first attempt at this dish. It was actually difficult to find a recipe that I could easily follow so I combined a few recipe steps together and made this Baked Garlic Lemon Salmon dish just in time to celebrate my mother-in-law’s birthday.

Baked Garlic Lemon Salmon

INGREDIENTS

  • Fresh bone-in salmon (They say bone-in but they do try to take out as many bones as they can. We were lucky not to get any bones in ours)
  • 8 garlic cloves chopped
  • 1 stick or 4 tbsp of butter
  • 1/4 cup of chopped green onions
  • 1/4 cup of Fresh Italian parsley
  • 1/4 cup of freshly-squeezed lemon
  • Salt and black pepper
  • 1/4 white wine

DIRECTIONS

  • Start by washing the salmon thoroughly and put it aside. You can also start the pre-heat process to 350.
  • In a pot, place the butter and wait until it melts and add all your chopped up garlic. Stir.
  • Once the garlic cooks a bit in the butter, remove from the top of the stove and place it on a trivet.
  • Then add the white wine and freshly-squeezed lemon to the pot. Then stir. Place aside.
  • Use a baking flat tray and cover it with tin foil (leave extra as you will be wrapping up the salmon in it). On the tin foil, spread butter so that the salmon doesn’t stick to it.
  • Once it is all covered, add your salmon.
  • With a spoon, add the sauce that was just made onto each salmon. Then with a brush, spread it on the whole salmon.

  • Then cover the salmon with tin foil and place it in the oven.
  • Time varies depending on how you want to have your salmon cooked and the type of oven you have. For me, it took 40 minutes to cook to perfection. *You can uncover the salmon 5 minutes prior to removing it from the oven.
  • Once cooked, remove from the oven and sprinkle the green onions and parsley over each salmon.
  • Then it is ready to serve!

This was an easy and simple recipe to follow and the end result was fantastic! I truly enjoyed eating this dish and I know I will be making it again soon. The best compliment anyone could get after you cook a meal, is when your guests ask to bring left overs home. This is how I know that I did a great job and had to share this recipe with all of you. Momma Braga’s Clam Stew

A very easy and simple recipe that my husband adores in our home is the Clam Stew. We like to do this meal every once in awhile and we love how simple it is.

Clam Stew

INGREDIENTS

  • 1/2 Onion
  • Olive Oil
  • Salt
  • Black Pepper
  • Paprika
  • Baby Clams (We love to use the Ferma Baby Clams)
  • Cup of water
  • 5 to 7 potatoes

DIRECTIONS

  • Start by washing the onions and potatoes. Chop up the onions and potatoes. Everyone has a preferred style for potatoes in their stew, we like it diced. Set the potatoes aside as you will need them later.
  • Once the onions are cut, place them in a pot with some olive oil with a pinch of paprika, salt and black pepper. On low heat cook the onion until the onions are a golden color. Then add your clams (including the liquid that is included in the canned clams), potatoes and one cup of water.
  • Let it cook on medium and stir.
  • Now cook until the potatoes are cooked and you are done. If a fork goes through the potatoes then that is my sign that they are done.
  • You can serve your clam stew in a bowl and if you like Portuguese buns, then provide some at the dinner table as they are great for dipping into the stew.

Zucchini Lasagna Recipe

Lately we have been trying to make better eating choices and this meant eliminating some traditional dishes. We haven’t had cheese in a very long time and wanted to have it for a special dish. After some lengthy research and discussions with friends, we realized how zucchini can be used as a substitution for pasta! This was one of the food items that I have eliminated from my eating lifestyle so I thought why not try a Zucchini Lasagna!

I took my traditional Lasagna recipe and changed it a bit to accommodate the Zucchini and another veggie too! 😉

Zucchini Lasagna

INGREDIENTS

  • Ground Chicken (or Ground Turkey or Ground Beef)
  • 1 Onion
  • Half of a tomato
  • Olive Oil
  • 5 Zucchinis
  • Shredded Mozzarella Cheese
  • Tomato Sauce
  • Salt
  • Black Pepper
  • Garlic Powder
  • Paprika
  • 4 Tablespoons of red wine

DIRECTIONS

  • Marinate your meat (which ever one you prefer to do. We love the ground turkey as it is much lighter) prior to cooking. I usually do this the night before to have the meat soak in the juices for more flavor.
    • Wash meat well.
    • Place meat in a bowl and add the following ingredients; salt, black pepper, garlic powder, paprika, 4 teaspoons of red wine (the wine added is what sets this recipe apart from many). Measurements for the ingredients are based on what you normally use in your meat marinating.
    • Leave the meat covered and in the fridge for the next day cooking.
  • The following day you can start cutting up your onions and tomato.
  • Once the onions and tomato are cut, place them in a pan with some olive oil. On low heat cook the onion and tomato until the onions are a golden color. Then add your meat.
  • With ground meat you will need to keep breaking it apart and stirring it to ensure it gets cooked. Once the meat is cooked remove it from the pan with a slotted spoon to ensure that the olive oil is drained.
  • Place the ground meat in a bowl and mix some tomato sauce.
  • Next step is prepping the zucchini, chesses and veggies.

  • Then the layering begins. Start with some tomato sauce and spread to cover the bottom of the lasagna tray. Layer with zucchini slices, tomato sauce, ground meat, bell peppers and mozzarella cheese. Continue layering until all ingredients are used, reserve 1/2 cup of mozzarella cheese for the top of the lasagna. *Tip: Use cheese on the first layer and the layer before the very top.

  • Bake in preheated oven for approx. 45 minutes (or until the cheese is melted to your liking). Remove from oven, and let stand 10 to 15 minutes before serving. *Zucchini is a very moist vegetable and there may be a lot of juices after cooking it. Some recipes recommend to add more meat to soak up the juices but we didn’t as we loved it this way.

Momma Braga’s Chicken Vegetable Soup Recipe

Chicken Vegetable soup is always a favorite in my household, especially on a crisp day or even when one is under the weather.

If you are looking for a simple and hearty soup recipe then this may be the one for you.

INGREDIENTS

  • Water
  • Vegetables (Assorted)
  • Salt
  • Olive Oil
  • Knorr of Chicken
  • Onion
  • Pasta (we usually use the small alphabet pasta or elbow macaroni pasta)
  • Potatoes
  • Boiled Chicken Breast (marinated with salt, black pepper and garlic powder)

DIRECTIONS

  • First clean the chicken breast and marinate it with some salt, black pepper and garlic powder. Once completed, boil it first until it is fully cooked.
  • Once chicken breast is cooked, remove it from the water. Shred the chicken breast into pieces to add into the soup afterwards.
  • In a new pot, add water for the soup. It is always best to almost fill to the top as water does decrease when boiled. Add some salt, a dash of olive oil and knorr of chicken.
  • Clean the vegetables that you would like to add into the soup. We like using carrots, cauliflower, broccoli and onions. Add the vegetables into the pot of water.
  • We also peel potatoes and cut them into small pieces to add into the soup.
  • Once all ingredients are added, turn the heat onto medium.
  • Stir as necessary and once potatoes are almost fully cooked, add the pasta and shredded chicken. Take a quick taste to see if additional salt needs to be added.
  • Once pasta is cooked, the soup is ready.

That is it! A simple recipe that is hearty and delicious! This soup is a great side dish for a lunch sandwich. Enjoy!

  1. Tell me a little bit about yourself.

I am a big dreamer and a mom to two amazing girls. I am also the Founder of GOOD FOR KIDS, a socially responsible start-up dedicated to launching products that are good for kids. Several years ago, I came up with the idea of creating a healthy eating toy and book that can inspire children to make healthy food choices. As a mom, I’ve struggled to keep my kids away from sugary junk and to get them to eat more fruits and veggies, so I decided to turn my idea into reality. Over the last year, I put an enormous amount of effort and passion into creating “The World’s First Healthy Eating Doll” and writing an adorable healthy eating picture book. I am delighted that both the toy and the book are now ready to share with the world!

  1. How is your product going to inspire healthy eating? How will it work?

The idea behind the Healthy Eating Doll and the book is to introduce children to the concept of making smart food choices. Reading and imaginative play are two of the most formative forces in childhood and they provide a great opportunity to teach children about health and good nutrition in a simple, fun and unobtrusive way.

Summer, “The World’s First Healthy Eating Doll”, is a smart magnetic doll that can easily tell which foods are good for her. She comes with a set of 20 colorful, wooden toy foods and a cute shopping bag. Healthy foods like apples, carrots, tomatoes, blueberries and broccoli stick to her mouth so she can “eat” them. If the doll is offered a lollipop however, she will not take it. The effect of tasting and touching the foods is accomplished through the use of hidden magnets, that are safely and inconspicuously embedded in the mouth and the hands of the doll. Summer can easily pick up healthy foods with her hands and bring them to her mouth. She really knows what’s good for her!

My children’s picture book “Healthy Foods Are Fun to Eat” is also a lot of fun. The book is filled with bouncy rhymes and gorgeous illustrations made entirely of fruits and veggies. It features food art created by over 10 talented artists from all around the world! We custom-printed one SUPER large copy of the book which is now the largest known healthy eating picture book in the world😊 This special, gigantic copy will travel to libraries, schools and children’s museums to spread the positive message of healthy eating.

  1. What inspired you to come up with this idea?

I am a healthy eating enthusiast and I have always looked for ways to get my children to love and appreciate wholesome foods. Unfortunately, it’s not always that easy. We live in a world filled with countless unhealthy temptations that even grown-ups like me find difficult to resist.

I came up with the idea for the healthy eating doll and book when I saw a girl sharing a real apple with her doll and saying: “Here, eat this. It’s good for you!” It was so refreshing to see how this little mommy wanted the best for her “child”. We all want our kids to grow up happy and healthy and this beautiful experience inspired me to create the educational toy and book.

When I explained how the doll works, she was even more excited and told me that she wants to eat healthy too. I have to say this is a great start and she doesn’t even have the doll at hand yet! Fillet Sole Recipe

It is always a compliment when I get requests from loyal readers of Momma Braga and today’s recipe post is inspired by one of them.

A recipe that I love doing and is also one of my favorite dishes is fillet of sole. Growing up in a Portuguese household, fish was consumed at least one to two times a week. One popular dish is the fillet of sole.

Now many prepare and cook it differently which makes recipe sharing a delight. You can always try something new on a tradition.

Here is my simple recipe on a classic Portuguese dish.

INGREDIENTS

  • Fillet soles
  • Salt
  • Lemon
  • Olive Oil
  • All-Purpose Flour
  • Eggs

DIRECTIONS

  • First clean the fillet soles in water (I usually grab a package of fillets at my local grocery store which are frozen. Once unfrozen, I wash them.)
  • Once cleaned marinate them with a little salt and squeeze lemon over all the fish.
  • While it sits in the juices, prep your work station.
  • First spread all-purpose flour on a flat plate.
  • Secondly, crack two eggs in a bowl (placing the shells in the compost). Scramble the eggs in the bowl.
  • Thirdly, add olive oil to a frying pan. Place the pan on the oven for frying. Start the heat on low to get the olive oil warm.
  • Then the frying fish process begins. First take a fillet and dip it into the egg bowl to cover the fish in egg. Once completed place it on the plate with the all-purpose flour. Cover the fish on both sides with the flour. Then place the fish in the frying pan. Let it fry one side and then flip it to the other side. I usually let it cook until it is golden crispy.
  • Repeat the above step until all the fish is cooked.

That is it! A simple recipe that will have your guests raving. For side dishes you can do anything like salad, veggies, rice and potatoes. One of our favorite is the Portuguese Style Rice. Either way many sides would make this dish delish!

Canja Da Galinha (Portuguese Chicken Soup) Recipe

The beauty of recipes is the variations that can be done with them. This is why I love sharing the way my family makes some traditional Portuguese dishes as every family does it a little different but all still so great.

One of my favorite soups growing up is Canja da Galinha which is Chicken Soup. It is perfect for a cold winter’s day and it is just so very yummy! My mom just made this recently and it made me remember some great childhood memories. So I asked her to share her recipe and she was delighted to share it with all of you.

As I was writing my mom’s instructions I realized how simple this soup was to make and will be giving it a try myself very soon.

Canja Da Galinha (Portuguese Chicken Soup) Recipe

INGREDIENTS

  • Water
  • Boneless and Skinless Chicken Breast
  • Salt
  • 1 Chicken Bouillon Cube
  • Onion (Chopped into quarters)
  • Olive Oil
  • Long Grain Rice (usually 1 – 2 cups, depending on how much you want to make)

DIRECTIONS

  • Fill a pot with water and add the boneless and skinless chicken breasts.
  • Once the chicken is cooked. Remove from the water and with a knife cut up the chicken breasts into shredded pieces.
  • In a new pot, fill it with at least 3 cups of water.
  • Add some salt, onion (in quarters), 1 chicken bouillon cube, olive oil and the long grain rice.
  • Stir the ingredients in the pot under medium heat.
  • Once the rice is expanded and tender, add the cooked chicken breast.
  • Stir one last time and close the heat.
  • Optional: There are other ingredients that you can add into the soup and to each their own. 😉 We have added some chicken giblets and gizzards into the soup as well and it has been delish!

And there you have it, Portuguese Chicken Soup! Such a quick and simple way to a nice soup for those cold crisp days. Give it a try and let me know what you think of it!

Even though this book is around getting your children to enjoy vegetables, it is also great for us as adults too. Recently, we have started to make better eating choices for ourselves so the timing of this book was perfect!

Now we couldn’t do a review on an activity and recipe book without trying any of them. So we did! We of course are ready for Spring and Summer weather so we picked Asparagus (Spring) and Bell Peppers (Summer) to try out.

We first tried the Asparagus Logs which were a lot of fun to do. The beauty of each activity and recipe is the wealth of skills that each one provides to you and your little one.  For example in the Asparagus Logs provides a description, benefits and how to use the vegetable. Then you have your list of what you need and instructions on how to complete the activity and it is neatly divided on who’s responsibility it falls under (love that!). Then there are some tips and there is a brief description of how your child benefits from this activity – genius!

Nikki and I loved this activity and Nikki loved the feel and texture of the asparagus as she was building. It was a great activity to introduce her to this new vegetable.

The next one we tried involved one of our favorite vegetables, Bell Peppers! So we combined that with another love of ours which is kebabs. This one was a recipe and so simple to follow. Nikki loved helping put the bell peppers onto the skewers and it was delish!

I am sure we will be trying a lot more in the days, weeks and months to come. It is a great addition to our kitchen and our health thanks Melanie Potock for putting together another great resource for families to thrive.
