Easy Oven Roast Beef Recipe

Our recipes have been very popular on our blog and I want to thank everyone for taking the time to show us the love! In today’s post, I am sharing an easy over roast beef recipe that I created by taking what I liked best from my mom and sister’s recipe.

I am a very simple person and like keeping ingredients as simple as possible. After going on Pinterest almost daily for two weeks straight to look at roast beef recipes, I just got deflated. I didn’t think I could make it as it all seemed hard and complicated. Even the ones that said, “Easy.” I combined my usual ingredients and added a little extra to really bring this recipe to the delicious level that had everyone wanting more.

Oven Roast Beef

INGREDIENTS

  • Marinate your oven roast a day prior to let the meat soak in the ingredients for best taste.
    • Wash roast well.
    • Then make cuts in the meat on top. I sliced a bit into the meat but not all the way through. This way the ingredients can get into the meat and the juices will flow while cooking.
    • Place the roast in a roasting pan.
    • Add your ingredients: salt, black pepper, chopped garlic cloves, paprika, Half cup of red wine and half cup of water. Measurements for the ingredients are based on what you normally use in your meat marinating.
    • Remember to add ingredients on top and bottom of the roast. Then massage it into the roast all over. This was fun!
  • Cut the onions into rings and spread them on the roast and within the roasting pan. It will float in the wine and water that was used.
  • Add 1 tablespoon of butter, one bay leaf into the roasting pan and drizzle olive oil on roast an in the pan.
  • Place it in the fridge with a tin foil covering it until you are ready to cook the next day.
  • The next day remove the pan from the fridge and after the oven is pre-heated (475 Fahrenheit), place it in the oven with the tin foil still wrapped.
  • Place timer for 60 minutes. Once the time is up, turn the oven roast over to cook the bottom side.
  • Place timer for another 60 minutes. Once the time is up, remove it from the oven.
  • Let it cool it down so it is safe to cut. Once it is, you can slice the roast beef all the way through. This is a great way to determine if you need to cook more to ensure that it cooked to your liking.
  • We like it well done so once it was sliced, I placed it back in the oven for another 30 minutes on one side and then flipped them for another 20 minutes (All timing can vary depend on ovens).
  • Once complete you can remove from the oven and it can be ready to serve with a side of your choice. I kept some of the sauce from the pan and onions onto the tray to keep the flavor. 😉
  • Optional – we made some gravy to add over the roast beef and I used roasted potatoes as the side for my family. This was a great hit!

BBQ Chicken Kabobs | Recipe

A summer favorite recipe is BBQ chicken kabobs and it’s easy to make!

We love making it as much as we love eating it.  😉 Here is our recipe.

 

BBQ Chicken Kabobs

INGREDIENTS

  • 6 large chicken breasts (feeds up to 6 people)
  • Olive Oil
  • Salt
  • Black Pepper
  • Garlic Powder
  • Paprika
  • Wine
  • Water
  • Vegetables (peppers, onion and zucchini)

DIRECTIONS

  • Wash the chicekn breasts thoroughly and cut them into pieces to insert on the kabob skewers later.
  • Once all cut, marinate the chicken. You can season it based on your liking. We used salt, black pepper, garlic powder and paprika. Then half a cup of red wine and half a cup of water. Mix and place in fridge until you are ready to BBQ.

  • Time to cut the veggies that you want on your kabobs. We did peppers, onions and zucchini. This time we seasoned our veggies to add more taste to our kabobs
    • Salt
    • Black Pepper
    • Olive Oil

  • Once everything is cut and seasoned, you are ready to create your kabobs.
  • This is the fun part as you can construct your kabobs any way that you please. For these ones, I did 3 veggies, chicken and then 2 veggies as my pattern (We used metal skewers and prior to using them, we soaked them in water).
  • Once all your skewers are ready, time to place them on your BBQ on medium heat. Remember to keep turning them as it can cook quickly.

  • After about 30 to 40 minutes, it was ready to serve.
  • We added some sides to our dish such as salad and rice.

Momma Braga’s Roasted Potato Recipe

Growing up I always had a soft spot for potatoes as it was my go-to side every time my mom would ask what I wanted as a side. The amazing thing about potatoes is that you can make them in so many different ways. So this weekend, I tried a different way of making roasted potatoes by using a cupcake tray. Yes! Cupcake Tray!

This was such an easy and simple recipe that took me a total of 40 minutes which included prep, cooking time and serving. *Please note that time and oven temperature may vary depending on the equipment that you use in your own home. Also remember that when you are cooking, have fun! 🙂

 

Roasted Potatoes

INGREDIENTS

  • 4 Large Potatoes (Any kind that you like, we use white potatoes)
  • Olive Oil
  • Salt
  • Black Pepper
  • Garlic Powder
  • Parsley Flakes

DIRECTIONS

  • Wash the potatoes thoroughly and cut them into four (4) quarters.
  • Place potatoes in a Ziploc and put ingredients (use quantity that you are comfortable with using).
    • Salt
    • Black Pepper
    • Garlic Powder
    • Olive Oil
  • Once all the ingredients have been added, mix it all together in. Why we love the Ziploc is the option of shaking it in the bag 😉
  • We used a cupcake tray and placed our quarters into a slot (you can add two to three depending on the size of the potatoes). We found that this type of tray really made a difference with baking the potatoes perfectly.
  • Once potatoes are all set, we added some parsley flakes for extra flavour.
  • Bake in preheated oven at 450 for approx. 25 minutes. Then move potatoes around to get all sides cooked and lower temperature to 350 for 15 minutes.
  • Once time is up, let it stand for a few minutes and then place them on a serving tray. It truly is delicious!

Momma Braga’s Roll-Up Lasagna Recipe

Pinterest is such a wonderful medium that offers such great ideas and it seems that I found some extra time on my hands so I ended up looking at some recipes. I came across one that took the lasagna and literally rolled it up!

So I decided why not take my lasagna recipe and try their idea out! The end result was absolutely delicious!

Lasagna

INGREDIENTS

  • Ground Chicken (or Ground Turkey or Ground Beef)
  • 1 Onion
  • Olive Oil
  • Lasagna Pasta
  • Shredded Mozzarella Cheese
  • Tomato Sauce
  • Salt
  • Black Pepper
  • Garlic Powder
  • Paprika
  • 4 Tablespoons of red wine
  • Parsley Flakes

DIRECTIONS

  • Marinate your meat (which ever one you prefer to do. We used ground turkey this time.) prior to cooking.
    • Wash meat well.
    • Place meat in a bowl and add the following ingredients; salt, black pepper, garlic powder, paprika, 4 teaspoons of red wine (the wine added is what sets this recipe apart from many). Measurements for the ingredients are based on what you normally use in your meat marinating.
  • Cut the onions up into small pieces.
  • Once the onions are cut, place them in a pan with some olive oil. On low heat cook the onion and tomato until the onions are a golden color. Then add your meat.
  • With ground meat you will need to keep breaking it apart and stirring it to ensure it gets cooked. Once the meat is cooked remove it from the pan with a slotted spoon to ensure that the olive oil is drained.
  • Place the ground meat in a bowl and mix some tomato sauce.
  • In another pot, fill it with water and add a drizzle of olive oil with a dash of salt and the add your lasagna pasta. Once the pasta is cooked, drain the water and fill it with cold water to cool down the pasta.
  • Then the roll-up begins! Start with some tomato sauce and spread to cover the bottom of the lasagna tray.
  • Take one of the lasagna noodles (make sure it is dry) and place it in the tray. Add some tomato sauce, then add your ground meat and then some cheese.

  • Then carefully roll it up slowly and place it at the far end of the tray in order to do more lasagna roll-ups. Continue until you have made enough roll-ups that you need.

  • Once it is all rolled up, use some tomato sauce to cover the top of the noodles and then add some cheese (yes please!)

  • Bake in preheated oven for approx. 45 minutes (or until the cheese is melted to your liking). Remove from oven, and let stand 10 to 15 minutes before serving and you can add some parsley flakes.
