Momma Braga’s Chicken Vegetable Soup Recipe

Chicken Vegetable soup is always a favorite in my household, especially on a crisp day or even when one is under the weather.

If you are looking for a simple and hearty soup recipe then this may be the one for you.

INGREDIENTS

  • Water
  • Vegetables (Assorted)
  • Salt
  • Olive Oil
  • Knorr of Chicken
  • Onion
  • Pasta (we usually use the small alphabet pasta or elbow macaroni pasta)
  • Potatoes
  • Boiled Chicken Breast (marinated with salt, black pepper and garlic powder)

DIRECTIONS

  • First clean the chicken breast and marinate it with some salt, black pepper and garlic powder. Once completed, boil it first until it is fully cooked.
  • Once chicken breast is cooked, remove it from the water. Shred the chicken breast into pieces to add into the soup afterwards.
  • In a new pot, add water for the soup. It is always best to almost fill to the top as water does decrease when boiled. Add some salt, a dash of olive oil and knorr of chicken.
  • Clean the vegetables that you would like to add into the soup. We like using carrots, cauliflower, broccoli and onions. Add the vegetables into the pot of water.
  • We also peel potatoes and cut them into small pieces to add into the soup.
  • Once all ingredients are added, turn the heat onto medium.
  • Stir as necessary and once potatoes are almost fully cooked, add the pasta and shredded chicken. Take a quick taste to see if additional salt needs to be added.
  • Once pasta is cooked, the soup is ready.

That is it! A simple recipe that is hearty and delicious! This soup is a great side dish for a lunch sandwich. Enjoy!

Fillet Sole Recipe

It is always a compliment when I get requests from loyal readers of Momma Braga and today’s recipe post is inspired by one of them.

A recipe that I love doing and is also one of my favorite dishes is fillet of sole. Growing up in a Portuguese household, fish was consumed at least one to two times a week. One popular dish is the fillet of sole.

Now many prepare and cook it differently which makes recipe sharing a delight. You can always try something new on a tradition.

Here is my simple recipe on a classic Portuguese dish.

INGREDIENTS

  • Fillet soles
  • Salt
  • Lemon
  • Olive Oil
  • All-Purpose Flour
  • Eggs

DIRECTIONS

  • First clean the fillet soles in water (I usually grab a package of fillets at my local grocery store which are frozen. Once unfrozen, I wash them.)
  • Once cleaned marinate them with a little salt and squeeze lemon over all the fish.
  • While it sits in the juices, prep your work station.
  • First spread all-purpose flour on a flat plate.
  • Secondly, crack two eggs in a bowl (placing the shells in the compost). Scramble the eggs in the bowl.
  • Thirdly, add olive oil to a frying pan. Place the pan on the oven for frying. Start the heat on low to get the olive oil warm.
  • Then the frying fish process begins. First take a fillet and dip it into the egg bowl to cover the fish in egg. Once completed place it on the plate with the all-purpose flour. Cover the fish on both sides with the flour. Then place the fish in the frying pan. Let it fry one side and then flip it to the other side. I usually let it cook until it is golden crispy.
  • Repeat the above step until all the fish is cooked.

That is it! A simple recipe that will have your guests raving. For side dishes you can do anything like salad, veggies, rice and potatoes. One of our favorite is the Portuguese Style Rice. Either way many sides would make this dish delish!

Canja Da Galinha (Portuguese Chicken Soup) Recipe

The beauty of recipes is the variations that can be done with them. This is why I love sharing the way my family makes some traditional Portuguese dishes as every family does it a little different but all still so great.

One of my favorite soups growing up is Canja da Galinha which is Chicken Soup. It is perfect for a cold winter’s day and it is just so very yummy! My mom just made this recently and it made me remember some great childhood memories. So I asked her to share her recipe and she was delighted to share it with all of you.

As I was writing my mom’s instructions I realized how simple this soup was to make and will be giving it a try myself very soon.

Canja Da Galinha (Portuguese Chicken Soup) Recipe

INGREDIENTS

  • Water
  • Boneless and Skinless Chicken Breast
  • Salt
  • 1 Chicken Bouillon Cube
  • Onion (Chopped into quarters)
  • Olive Oil
  • Long Grain Rice (usually 1 – 2 cups, depending on how much you want to make)

DIRECTIONS

  • Fill a pot with water and add the boneless and skinless chicken breasts.
  • Once the chicken is cooked. Remove from the water and with a knife cut up the chicken breasts into shredded pieces.
  • In a new pot, fill it with at least 3 cups of water.
  • Add some salt, onion (in quarters), 1 chicken bouillon cube, olive oil and the long grain rice.
  • Stir the ingredients in the pot under medium heat.
  • Once the rice is expanded and tender, add the cooked chicken breast.
  • Stir one last time and close the heat.
  • Optional: There are other ingredients that you can add into the soup and to each their own. ūüėČ We have added some chicken giblets and gizzards into the soup as well and it has been delish!

Portuguese Potato Salad With Tuna

A few weeks ago I was chatting with one of my uncles about my blog and the feature of recipes. We went through a different list of some of our favorite dishes and then he asked if I shared the Portuguese Potato Salad with Tuna recipe…I haven’t! So thank you Uncle John for inspiring this share!

Growing up this was a dish that my mom often made and it was so yummy but I think families will appreciate how quick and easy it is to make.

Portuguese Potato Salad With Tuna

INGREDIENTS

  • Water
  • Potatoes
  • Salt
  • Garlic Powder or a Clove of Garlic
  • Tuna
  • Olive Oil
  • Optional: Eggs, Onion and Chickpeas

DIRECTIONS

  • Peel the potatoes, chop them into pieces and wash them in water.
  • Fill a pot with water and add the chopped potatoes.
  • In the pot add some salt and a dash of garlic powder or a clove of garlic (This is a great added taste). You can also use this time to boil eggs if you would like to add this to the dish.
  • Boil the potatoes until they get soft to eat. You may want to taste them during the process to see if you need to add some more salt for taste.
  • Once the potatoes are cooked, drain the water.
  • Open up a can of tuna and drain out the oil. Break up the tuna to place over the potatoes.
  • Take your plate and add the desired potatoes that you would like to eat, then add the tuna that you would like on top.
  • Drizzle olive oil over the food and mix it all together.
  • Optional: Chop up some onions to add on top and slice up some boiled eggs. You can even add chickpeas to the dish and it will be just as great and filling!

5 Halloween Munchies Recipes

We all know that every good Halloween party or get together, needs some munchies to keep your little monsters full and satisfied. I will share with you some ‚Äúnot so scary‚ÄĚ Halloween munchies, that are easy to make and yummy to your tummy.

Remember to use your best judgment as to which tasks you can have your child help you with.

Ghost Popsicle’s

What you will need: Bananas, White chocolate wafers, Chocolate chips and Popsicle sticks

  • First unpeel your bananas and cut them in half.
  • Melt your wafers until your white chocolate is liquid (I did mine in the microwave for 40 seconds).
  • Then dip half of your Popsicle stick into the chocolate and stick it into the end of the banana.
  • Once completed, gently dip the whole banana into the melted chocolate and add three chocolate chips (two for eyes and one for a surprised spooky mouth).
  • Then set all the done ones onto a tray over wax paper and put it in the freezer for about an hour.

Veggie Treat

What you will need: A large tray, veggie dip, baby carrots, broccoli and cucumber

  • First lay out your baby carrots in to a circle shape and use the broccoli as your stem of your veggie pumpkin creation.
  • Remove the baby carrots from the areas in which you would like to have the eyes and nose and place a small container with veggie dip in those places.
  • Finally remove the baby carrots to create your mouth and add some sliced cucumbers in that area.

Monster sandwiches

What you will need: Toast bread, cold cuts, mayo, cheese, circle shape cookie cutter and green olives with opening

  • First with your cookie cutter, cut out circle shapes on your toast bread slices.
  • Once completed, assemble your sandwiches using your mayo first, then cold cuts.
  • Before you add your cheese, use a knife to design your cheese slices to look like sharp teeth.
  • Once you have added that and put another circle piece of toast bread you are ready to add your eyes. That‚Äôs right you guessed it! Use the olives as your monsters eyeballs.
  • To keep them in place you can add a tooth pick to each one, just make sure your guests can see the tooth picks so that they can pick them out before taking a bite.

Sweet and sticky pumpkins!

What you will need: Rice crispy Squares, Rolo chocolate and green cookie icing

  • Feel free to make your own Rice Crispy Squares from scratch. Or you can just buy a box of Rice Crispy Squares, add two drops of Orange food coloring on each, pop them in the microwave for 8 seconds and then shape them into a pumpkin.
  • Once you have that done stick one Rolo chocolate on the top as your pumpkin stem.
  • Now you can stop right there or you can use the green icing to create some more detail on the pumpkin like leaves.

Eye love cupcakes!

What you will need: Your favorite cupcake recipe, white buttercream icing, red icing, black icing and lifesaver candy

  • First make and bake your favorite cupcake recipe and then set them aside to cool down.
  • Now comes the fun part‚Ķ decorating!
  • Spread your white buttercream icing on all of your cupcakes.
  • Then place one life saver in the middle of each cupcake.
  • Using your black icing fill in the hole in the middle of the life saver to complete the look of your eye.
  • Finally add your final detail using the red icing and drawing out some veins.

I hope I didn’t make you drool too much! All of these ideas are super easy to make and it doesn’t take too much time to make.

Momma Braga’s Mini Pizza Recipe

This recipe is one of my favorites and super easy to do especially for your family. I remember my mom making this for us to eat when we went away to our trailer many years ago. Get ready to learn how to make mini pizzas and enjoy them at your next family dinner.

INGREDIENTS

– English Muffins (6 pk)
– Mozzarella Cheese (shredded)
– Tomato Sauce
– Toppings (e.g. pepperoni, green peppers, mushroom, etc.)

DIRECTIONS

– Cut the English muffins in half (the 6 muffins will then become 12).
– Spread tomato sauce on each muffin using a spoon.
– Drizzle mozzarella cheese on each muffin and use as much cheese as you desire.
– Add your favorite toppings (the ones mention above are my favorite but I use turkey pepperoni instead).
– Once each muffin has it’s ingredients place them on a baking sheet and place them in the oven at 400.
– Time may vary but usually 30 minutes later you have yourself some mini pizzas to eat.
– Let them cool down before consuming.

Momma Braga’s Portuguese Beef Stew (Carne Guisada)

Beef stew (Carne Guisada) is a favorite in my household and one that I grew up with. Like with many recipes there are so many different ways of making it! Here is how my family makes this popular dish.

Carne Guisada

INGREDIENTS

  • Over a pound of chopped beef stew meat
  • 1 Onion
  • Half of a tomato
  • Olive Oil
  • Salt
  • Black Pepper
  • Garlic Powder
  • Paprika
  • Half a cup of¬†red wine
  • Half a cup of water
  • 5¬†to¬†7 potatoes
  • Portuguese buns

DIRECTIONS

  • Marinate your beef stew meat. I usually do this the night before to have the¬†meat soak in the juices for more flavor.
    • Wash meat well.
    • Place¬†meat in a bowl and add the following ingredients; salt, black pepper, garlic powder, paprika,¬†half a cup of wine and half a cup of water. Measurements for the ingredients are based on what you normally use in your meat marinating. Then mix well.
    • Leave the¬†meat covered and in the fridge for the next day cooking.
  • The following day start by washing¬†the onions,¬†tomato and potatoes.¬†Chop up the onions, tomato and potatoes. Everyone has a preferred style for potatoes in their stew, we like it diced. Set the potatoes aside as you will need them later.
  • Once the onions and tomato are cut, place them in a pot with some olive oil with a pinch of paprika. On low heat cook the onion and tomato until the onions are a golden color. Then add your meat with it’s sauce that you marinated with the day before.
  • Let it cook on medium and stir.
  • Once the meat is almost cooked, add your potatoes and a pinch of salt. This will add flavor to the potatoes you just added. If you feel that you need to add some more water then add another cup of water. Sometimes the meat soaks up a lot of the liquid as you are cooking.
  • Now cook until the potatoes are¬†cooked and you are done.¬†If a fork goes through the potatoes then that is my sign that they are done.
  • You can serve your beef stew in a bowl and if you like Portuguese buns, then provide some at the dinner table as they are great for dipping into the stew (my favorite part of the whole meal!).

Momma Braga’s Lasagna Recipe

Lasagna is a popular dish and one that originated in Italy. Even though I am not Italian and do not claim to be a lasagna expert, but I do enjoy making this dish for my family and friends to eat.

Since this is one of the dishes that my friends¬†request¬†when I¬†host a dinner party,¬†I decided to share Momma Braga’s lasagna recipe with all my readers and fans! Enjoy!

Lasagna

INGREDIENTS

  • Ground Chicken (or Ground Turkey or Ground Beef)
  • 1 Onion
  • Half of a tomato
  • Olive Oil
  • Lasagna Pasta
  • Shredded Mozzarella Cheese
  • Tomato Sauce
  • Salt
  • Black Pepper
  • Garlic Powder
  • Paprika
  • 4 Tablespoons of red wine

DIRECTIONS

  • Marinate your meat (which ever one you prefer to do. We love the ground chicken as it tastes much lighter) prior to cooking. I usually do this the night before to have the¬†meat soak in the juices for more flavor.
    • Wash meat well.
    • Place¬†meat in a bowl and add the following ingredients; salt, black pepper, garlic powder, paprika, 4 teaspoons of red wine (the wine added is what sets this recipe apart from many). Measurements for the ingredients are based on what you normally use in your meat marinating.
    • Leave the¬†meat covered and in the fridge for the next day cooking.
  • The following day you can start cutting up your onions and¬†tomato.

  • Once the onions and tomato are cut, place them in a pan with some olive oil. On low heat cook the onion and tomato until the onions are a golden color. Then add your meat.
  • With ground meat you will need to keep breaking it apart and stirring it to ensure it gets cooked. Once the meat is cooked remove it from the pan with a slotted spoon to ensure that the olive oil is drained.
  • Place the ground meat in a bowl and mix some tomato sauce.
  • In another pot, fill it with water and add a drizzle of olive oil and the add your lasagna pasta. Once the pasta is cooked, drain the water and fill it with cold water to cool down the pasta.
  • Then the layering begins. Start with some tomato sauce and spread to cover the bottom of the lasagna tray. Layer with lasagna pasta, tomato sauce,¬†ground meat and¬†mozzarella cheese. Continue layering until all ingredients are used, reserve 1/2 cup of mozzarella cheese for the top of the lasagna. *Tip: Use cheese¬†on the first layer and¬†the layer before the very top.

  • Bake in preheated oven for approx. 45 minutes (or until the cheese is melted to your liking). Remove from oven, and let stand 10 to 15 minutes before serving.

Portuguese Braised Peas with Eggs and Chourico Recipe

A couple of weeks ago, I shared my very first recipe blog post and it was a hit! Thank you to everyone who enjoyed it and shared the recipe. Since it was such a hit, I decided to share another recipe and this time it is one from my mom.

Last weekend I went to visit my parents and my mom made me one of my favorite Portuguese dishes that I grew up with. It is called Ervilhas Guisadas which is Portuguese Braised Peas with Eggs and Chourico. This dish is well known in the Portuguese community and many people prepare it differently but the end result is always the same, delicious! Today I am sharing the recipe of how my mom prepares this classic Portuguese dish.

ERVILHAS GUISADAS

INGREDIENTS

  • Medium Chopped Onion
  • Medium Chopped Tomato
  • 1 Portuguese Chorizo, sliced
  • Olive Oil
  • Paprika
  • Sea Salt
  • Black Pepper
  • 1 bag of frozen peas
  • Potatoes, cut into small pieces
  • 3 Eggs

DIRECTIONS

  • In a pot, drizzle olive oil to cover the base of the pot. Then add the chopped onion, chopped tomato, sliced chorizo, paprika and black pepper (paprika and black pepper measurements are based on what you normally use in a dish). Stir the ingredients in the pot.
  • Cook on medium heat and once onions are cooked, add about 3 cups of water (or to your liking).
  • Once the water comes to a boil, add frozen peas and potatoes. You can add your sea salt at this point.
  • In a separate bowl, crack the three eggs.
  • When the peas and potatoes are cooked, slowly add the eggs and start stirring.
  • Once the eggs are cooked, your meal is ready to be served.
  • Optional: I personally like eating this meal with a side of corn bread. It’s the Portuguese in me that just loves to have some bread to accompany the food.

Momma Braga’s Portuguese Style Rice Recipe

Being a daughter of Portuguese parents I have been exposed to the world of Portuguese cuisine and I am a fan of it. I truly enjoy Portuguese food and even though I am not a food expert there are a few things that I have learned to make such as the rice that is usually accompanied by many Portuguese dishes.

Rice is a favorite in my household and goes well with many of the foods that I make. It is always a favorite when I am hosting guests for dinner and when I shared a photo of the latest rice dish I made, I had a special request to share my recipe. I have never done a recipe before as I usually eye and taste my food as I am cooking it. That is a trait that I got from my mom as she has always eyed her ingredients.

So here is my first recipe blog post and hopefully your results will taste as yummy as mine do. However, do keep in mind to considerate your own normal measurements for ingredients as some people may like more salt for example then what I suggest.

Portuguese Style Rice

Ingredients

  • 3 cups of parboiled rice, wash and drained¬†(feeds up to¬†6 people)
  • 3 cups of water
  • 1/2 yellow onion, finely chopped
  • 3 garlic cloves, minced
  • 1/2 teaspoon sea salt (or salt whichever you normally use)
  • 1/2 teaspoon black pepper
  • 1 teaspoon of paprika
  • 1 teaspoon of olive oil
  • 1 cube of knorr of chicken
  • 1 teaspoon of butter
  • Optional: tomatoes, red pepper or shrimp

Directions

  • First wash and drain the rice. Once washed and drained place the rice in a pot.
  • Add the following ingredients to the rice: finely chopped onion; 3 minced garlic cloves; 1/2 teaspoon of sea salt; 1/2 teaspoon of black pepper; 1 teaspoon of paprika; 1 teaspoon of olive oil, 1 cube of Knorr of chicken; 1 teaspoon of butter. Once all the ingredients are added, then you add the 3 cups of water. *Tip: If you only make two cups of rice then you would only use 2 cups of water. Always match the amount of rice and water.
  • Optional: Many people also add tomatoes, red pepper or shrimp into their rice and it adds that extra flavour. You can add all of them but I would recommend picking just one of those ingredients into your rice. For the tomatoes and red pepper, just finely chop them up before adding them to the pot.
  • Once all your ingredients are all in the pot, stir¬†it.
  • Place on the oven and put the heat on medium.
  • As the rice is cooking, keep stirring to make sure that the rice does not stick to the bottom of the plate. Tip: Rice sticks fast and when the rice sticks to the bottom it smells and taste horrible. So it would be a waste of food. I have done this in my trial and error of cooking.
  • Once the water is almost all gone then the rice is done.
  • Remove the rice from the pot to a serving bowl and wait until it cools down a little before serving or just warn your guests of some hot rice.
  • If you want to add some kick to your rice you can squeeze lemon over the rice (my personal favourite) or you can add some Portugallo Sauces (you will learn more about this awesome product soon on Momma Braga). You can also add some olives on top for a little extra ūüėČ
