Ingredients (Serves 2)
For the Sardines:
– 4 fresh sardines, cleaned
– 1 tbsp olive oil
– Juice of 1 lemon
– 2 garlic cloves, minced
– 1 tsp paprika
– Salt & pepper to taste
– Fresh parsley for garnish
For the Lemon-Herb Quinoa:
– 1 cup cooked quinoa
– Zest and juice of ½ lemon
– 1 tbsp chopped fresh mint
– 1 tbsp chopped fresh parsley
– Salt to taste
For the Tomato-Cucumber Salad:
– 1 cup cherry tomatoes, halved – ½ cucumber, diced
– 1 tbsp red onion, finely chopped
– 1 tsp olive oil
– Splash of red wine vinegar
– Salt & black pepper
Instructions
1. Prep the Sardines Mix olive oil, lemon juice, garlic, paprika, salt, and pepper. Rub the marinade over sardines and let sit for 15 minutes.
2. Grill Time Preheat grill or stovetop grill pan. Grill sardines 3–4 minutes per side until crispy and golden. Garnish with chopped parsley and lemon slices.
3. Make the Quinoa Toss cooked quinoa with lemon juice, zest, herbs, and a pinch of salt. Serve warm or chilled.
4. Assemble Salad Combine all salad ingredients in a bowl and toss gently.
5. Plate It. Serve sardines alongside a scoop of quinoa and a generous spoonful of salad. Drizzle with extra virgin olive oil if desired.
